An article in Food and Safety News notes ground beef and tenderized steaks are undergoing increased testing for E. coli. The Office of the Inspector General released an audit mentioning that boxed beef often is sealed with the USDA mark and this causes many processors down the line to “assume [they] are pathogen free and, therefore, safe for grinding.” To read more, click HERE.
