Students Are Driving Universities Towards Sustainable Food

University students from around the U.S. gathered at TCF Bank Stadium in Minneapolis, Minn., last weekend to share ideas about food sustainability and take part in and event staged by the Real Food Challenge, as more and more college students are starting to push their schools to improve food sustainability by committing to the Real Food Challenge’s goal of 20 percent "real food" by 2020.

The Real Food Challenge defines "real food" as environmentally friendly and locally and socially responsible and it pledges to monitor the percentage of "real food" at colleges around the country, using a measurement system called the Real Food Calculator. According to Katie Blanchard, the Real Food Challenge’s Midwest coordinator, nearly 20 schools have already committed to 20 percent "real food" by 2020. To read more, click HERE.
